This Avocado, Strawberry, Spinach, and Poppyseed Vinaigrette Salad is a great mix of sweet and savory tastes. For a light and refreshing meal, this is great. The poppyseed vinaigrette gives each bite a burst of flavor.
Ingredients:
- 2 cups fresh spinach leaves
- 1 ripe avocado, sliced
- 1 cup fresh strawberries, sliced
- 1/4 cup sliced almonds
- 1/4 cup crumbled feta cheese
- For the Poppyseed Vinaigrette:
- 2 tablespoons olive oil
- 1 tablespoon white wine vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1 teaspoon poppy seeds
- Salt and pepper to taste
Instructions:
In a large salad bowl, combine the fresh spinach leaves, sliced avocado, and sliced strawberries
In a dry skillet, toast the sliced almonds over medium heat until they turn golden brown
Remove from heat and let them cool
Sprinkle the toasted almonds and crumbled feta cheese over the salad
In a small bowl, whisk together the olive oil, white wine vinegar, honey, Dijon mustard, poppy seeds, salt, and pepper to make the Poppyseed Vinaigrette
Drizzle the vinaigrette over the salad just before serving
Toss the salad gently to coat all the ingredients with the dressing
