Ingredients:
- 1 cup couscous
- 1 1/2 cups water
- 1 tablespoon olive oil
- 1 teaspoon ground turmeric
- Salt and pepper to taste
- Fresh mint leaves for garnish
Instructions:
Bring 1 1/2 cups of water to a boil in a saucepan
Add a pinch of salt and 1 teaspoon of ground turmeric and mix well
Boil some water, then add 1 cup of couscous
Take the pot off the heat and cover it with a lid
It needs to sit for 5 minutes so the couscous can soak up the turmeric and water
To separate the grains, fluff the couscous with a fork after 5 minutes
This will add 1 tablespoon of olive oil to the dish
Add pepper and salt to taste
Add fresh mint leaves to the turmeric couscous to give it a color and flavor boost
Serve the healthy mint and turmeric couscous as a side dish or as a base for your favorite meat or vegetables
