Healthy Turmeric Couscous with Mint

This healthy turmeric couscous with mint is a vibrant and flavorful side dish thats quick and easy to prepare. Ingredients:

  • 1 cup couscous
  • 1 1/2 cups water
  • 1 tablespoon olive oil
  • 1 teaspoon ground turmeric
  • Salt and pepper to taste
  • Fresh mint leaves for garnish

Instructions:

Bring 1 1/2 cups of water to a boil in a saucepan

Add a pinch of salt and 1 teaspoon of ground turmeric and mix well

Boil some water, then add 1 cup of couscous

Take the pot off the heat and cover it with a lid

It needs to sit for 5 minutes so the couscous can soak up the turmeric and water

To separate the grains, fluff the couscous with a fork after 5 minutes
