Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup sundried tomatoes, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions:
Preheat oven to 375F 190C
In a mixing bowl, combine chopped spinach, crumbled feta cheese, chopped sundried tomatoes, minced garlic, and olive oil
Season with salt and pepper to taste
Using a sharp knife, make a horizontal slit along the side of each chicken breast to create a pocket for stuffing
Stuff each chicken breast with the spinach, feta, and sundried tomato mixture, dividing evenly among the breasts
Secure the pockets with toothpicks if necessary
Season the outside of the chicken breasts with additional salt and pepper if desired
Heat a skillet over medium-high heat
Add a bit of olive oil to the skillet
Once the skillet is hot, add the stuffed chicken breasts and cook for 3-4 minutes on each side, or until lightly browned
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and no longer pink in the center
Remove the toothpicks before serving
Serve hot, garnished with fresh herbs if desired
