This Autumn Harvest Salad is a delightful combination of seasonal ingredients, perfect for fall gatherings or as a light and healthy meal. The sweetness of butternut squash and cranberries pairs beautifully with the creaminess of goat cheese and the crunch of toasted pecans.
Ingredients:
- 2 cups mixed greens
- 1 cup butternut squash, cubed
- 1/2 cup dried cranberries
- 1/4 cup toasted pecans
- 1/4 cup crumbled goat cheese
- 2 tablespoons balsamic vinaigrette
Instructions:
Turn on the oven and heat it up to 400F 200C
Add olive oil, salt, and pepper to the cubed butternut squash, and then roast it for 20 to 25 minutes, or until its soft
Mixed greens, roasted butternut squash, dried cranberries, toasted pecans, and crumbled goat cheese should all be put in a large bowl together
Add the balsamic vinaigrette to the salad and gently toss it all together
Serve right away and enjoy
