This Spicy Chicken and Quinoa Bowl is great for a busy weeknight because it only needs one pot and is ready in minutes. Its a healthy and filling meal because its full of protein, vegetables, and spices.
Ingredients:
- 1 cup quinoa
- 1 lb boneless, skinless chicken breasts, diced
- 1 cup cherry tomatoes, halved
- 1 bell pepper, diced
- 1 can black beans, drained and rinsed
- 1 cup frozen corn
- 1 cup chicken broth
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp paprika
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- 1 lime, sliced for garnish
Instructions:
Run cold water over the quinoa and drain it
Put chicken dices, cherry tomatoes, bell pepper, black beans, corn, chicken broth, cumin, chili powder, paprika, salt, and pepper in the Instant Pot
Place the Instant Pot lid on top and set it to Manual mode
High pressure for 8 minutes
Do a quick release of pressure when the cooking is done
Add the shredded cheddar cheese and mix it in until it melts and is well mixed in
Put the spicy chicken and quinoa in bowls and top them with lime slices and chopped cilantro
