Ingredients:
- 4 large collard green leaves
- 1 cup hummus
- 1 red bell pepper, thinly sliced
- 1 cucumber, thinly sliced
- 1 medium carrot, julienned
- 1/2 cup alfalfa sprouts
- 1/4 cup sliced olives
- Salt and pepper, to taste
Instructions:
Prepare the collard green leaves by washing them thoroughly and trimming the tough stems
Spread 1/4 cup of hummus evenly onto each collard green leaf
Layer the sliced red bell pepper, cucumber, carrot, alfalfa sprouts, and sliced olives onto each collard leaf
Season with salt and pepper to taste
Roll up the collard leaves tightly, tucking in the sides as you go, to form wraps
Slice each wrap in half diagonally and serve immediately, or wrap in parchment paper for later
