Ingredients:
- 1 cup rolled oats
- 1/2 cup rice flour
- 1/4 cup semolina sooji
- 1/2 cup yogurt
- 1/2 cup finely chopped onions
- 1/2 cup finely chopped tomatoes
- 1/4 cup finely chopped green bell pepper
- 1/4 cup finely chopped cilantro coriander leaves
- 2-3 green chilies, finely chopped adjust to taste
- 1 tsp cumin seeds
- 1/2 tsp baking soda
- Salt to taste
- Oil for cooking
Instructions:
In a blender, grind the rolled oats to a fine powder
In a mixing bowl, combine the ground oats, rice flour, semolina, and yogurt
Add water to make a thick batter and let it rest for 15-20 minutes
Add chopped onions, tomatoes, green bell pepper, cilantro, green chilies, cumin seeds, baking soda, and salt to the batter
Mix well
Heat a non-stick skillet or tava on medium heat and grease it lightly with oil
Pour a ladleful of the batter onto the skillet and spread it into a circle to form a thick pancake uthappam
Drizzle some oil around the edges and on top of the uthappam
Cover and cook on low heat for 2-3 minutes until the bottom is golden brown
Flip the uthappam and cook the other side until its cooked through and crisp around the edges
Repeat with the remaining batter to make more uthappams
Serve hot with coconut chutney or tomato chutney
