Ingredients:
- 2 cups of grape juice
- 2 cups of granulated sugar
- 1/2 cup of unsalted butter
- 1/2 cup of heavy cream
- 1 teaspoon of vanilla extract
- 2 cups of white chocolate chips
- 1 cup of chopped nuts optional
Instructions:
In a medium saucepan, combine the grape juice and sugar
Cook over medium heat, stirring constantly, until the mixture reaches 240F 115C on a candy thermometer
This should take about 15-20 minutes
Remove the saucepan from the heat and stir in the butter, heavy cream, and vanilla extract until well combined
Return the saucepan to low heat and cook for another 5 minutes, stirring constantly, until the mixture thickens and becomes a pale purple color
Remove from heat and stir in the white chocolate chips until they are fully melted and the mixture is smooth
If desired, fold in the chopped nuts at this point
Pour the mixture into a greased 8x8-inch 20x20 cm square pan and spread it evenly
Let the fudge cool at room temperature for a few hours, or refrigerate for faster setting
Once the fudge has set, cut it into squares and enjoy
